Chicken, Shiitake, and Skinny Noodles Stir Fry
Here’s a savory stir-fry recipe that you’d normally serve over rice or starchy noodles. But instead with Skinny Noodles, you cut the carbs to less than 10 grams and the calories to 270 per serving.
Makes 4 servings
Ingredients1 8 oz package Skinny Noodles Spaghetti, drained and rinsed
2 Tbsp canola oil
1 8 oz chicken breast, cut into 3/4 inch cubes
2 scallions julienned
1 carrot, shredded
1/4 cup fresh shiitake mushrooms (or rehydrated and rinsed, if dried)
1/4 cup water
1/3 cup ready-to-use bottled teriyaki sauce
Heat oil on high heat. Add chicken and cook until lightly browned. Add scallions, carrots and shiitake mushrooms, cook for 3 minutes. Add sauce to stir-fry. Add noodles and water, stir-fry for 3-4 minutes or until sauce thickens. Plate and garnish with sesame seeds.
Serving (without optional ingredients): 272 calories, 17g fat, 10g carbohydrates, 2g fiber, 15g protein
