Chilled Ramen (Hiyashi Chuka) with Skinny RamenMakes 1 serving

Ingredients

1 7 oz package Skinny Noodles Ramen Style
1 pouch Organic Miso Ramen Soup Base (comes with Skinny Ramen)

1 Tbsp seasoned rice vinegar
Water

Optional Ingredients

Thinly sliced cucumber
Tomatoes
Ham
Cooked chicken or tofu
Japanese style egg omelet
Picked ginger (shoga)
Thinly cut nori strips (dried seaweed)
Hot Japanese yellow mustard


Empty noodles into a colander, rinse with hot water, drain well. Blot with paper towel, refrigerate for 30 minutes to 1 hour. In a small bowl, mix miso ramen soup base,1/2 cup cold water and seasoned rice vinegar; set aside. Transfer chilled noodles to a shallow bowl, add optional toppings. Drizzle with soup base/vinegar mixture. Serve cold.
