Cucumber and Skinny Noodles Salad

This quick, easy salad is refreshing and delicious. It goes well with fish or chicken. Great for sharing!

Cucumber and Skinny Noodles Shirataki SaladMakes 4 servings

Ingredients
1 8 oz package Skinny Noodles Angel Hair, rinsed, drained, cut to 4-inch length, and set aside
1 large hothouse cucumber
3 Tbsp seasoned gourmet rice vinegar; OR 3 Tbsp cider vinegar and 2 Tbsp sugar or sugar substitute (we recommend Stevia)
1 clove crushed garlic
1 thinly sliced onion
1 thinly sliced red pepper
1/3 C chopped cilantro
Dash crushed dried chili pepper
Salt and pepper to taste
1/4 C chopped roasted almonds (optional)

Thinly slice cucumber; add Skinny Noodles and vinegar mixture. Mix and let marinate while preparing remaining ingredients. Add remaining ingredients and mix well. Add salt and pepper to taste. Serve chilled and garnish with roasted almonds before serving if desired.


Per Serving: 95 calories, 6g fat, 10g carbohydrates, 4g fiber, 3g protein
