Miracle Carb Diet Risotto

Miracle Carb Diet Risotto with Skinny Rice by Tanya Zuckerbrot, MS, RDMakes 2 servings

Nonstick spray
1 medium onion, chopped (1/2 cup)
2 garlic cloves, minced
2 C sliced fresh mushrooms
1 C vegetable broth, divided
8 oz package Skinny "Rice" Shirataki, rinsed and drained
3/4 C bite-size asparagus or 3/4 C broccoli, pieces
1 C diced zucchini (approximately 1 large zucchini)
1 medium tomato, seeded and diced (3/4 C)
1/4 C grated Parmesan cheese
3 Tbsp snipped fresh basil (optional)

In a large saucepan coated with nonstick cooking spray, cook the onion, garlic and mushrooms over medium heat until tender but not brown. Add Skinny "Rice," 1/2 cup broth, asparagus or broccoli, zucchini, and tomato, stirring constantly. Continue to cook and stir till liquid is absorbed. Add remaining 1/2 cup broth and Parmesan cheese and cook for 5-10 minutes more until creamy. Serve immediately.

Per Serving: 130 calories, 4g fat, 17g carbohydrates, 4g fiber, 10g protein
