Skinny Noodles Creamy Avocado Salad

Adapted from a recipe by First Time Mom and Losing It

Creamy Avocado Pasta with Shirataki NoodlesMakes 3-4 servings

Ingredients

2 8 oz packages Skinny Noodles Spaghetti
1-3 garlic cloves
1/4 C chopped fresh basil
1 medium ripe and pitted avocado
2 Tbsp extra virgin olive oil
1/2 lemon, juiced
Kosher salt and fresh black pepper to taste





Drain and rinse Skinny Noodles thoroughly. Parboil Skinny Noodles for 2-3 minutes; drain and set aside. Place garlic and basil in food processor; pulse to mince. Add avocado, oil, lemon juice, and 1 tablespoon water to food processor; process until combined thoroughly. If sauce is too thick, add another tablespoon of water. Season with salt and pepper to taste. Toss sauce with warm Skinny Noodles and serve immediately.
