Vegan "Oysters"

Vegan OystersMakes 4 servings of 3 "oysters" each.


1 8 oz package Skinny Noodles Shirataki Angel Hair (rinsed and drained)
2 C cooked oatmeal
2 large sheets nori (dried seaweed)
4 tsp salt
3 tsp black pepper
3 tsp sugar
7 Tbsp corn flour
Olive oil for deep frying

Cut Skinny Noodles Angel Hair into 1-inch pieces. Tear seaweed sheets into small pieces. Mix well all ingredients except corn flour. Add corn flour and mix well again. Heat olive oil in a medium sauce pan. With a spoon, scoop mixture and shape to resemble an oyster. Gently drop into the olive oil and fry for 4 - 5 minutes. Serve hot with lemon, soy sauce, or ketchup. Makes 12-14 Vegan “Oysters.”
