Lentil and Skinny Noodles Soup

This tasty soup is easy to make and protein-filled. You’ll love this delicious soup especially on a cold day.

Lentil and Skinny Noodles SoupMakes 2 servings

1 8 oz package Skinny Noodles (any type), drained and rinsed
1/2 cup cooked lentils
1/4 to 1/2 lbs skinless chicken breast, cut into small bite-sized pieces
1 Tbsp chopped onion
1 C frozen mix vegetable (or your favorite fresh vegetables)
1 to 1-1/2 cups chicken broth
2 Tbsp olive oil
Salt and pepper to taste
Parmesan cheese (if desired)

Sauté garlic and onion in olive oil in a skillet on low heat until the garlic turns light brown. Add chicken and cook until lightly browned. Add chicken broth, lentils and vegetables. Bring to a boil, and then reduce heat. Add Skinny Noodles and let simmer for 3 minutes. Remove from heat, top with Parmesan if desired, and serve.
