Cucumber and Skinny Noodles Salad
This quick, easy salad is refreshing and delicious. It goes well with fish or chicken. Great for sharing!
Makes 4 servings
Ingredients 1 8 oz package Skinny Noodles Angel Hair, rinsed, drained, cut to 4-inch length, and set aside 1 large hothouse cucumber 3 Tbsp seasoned gourmet rice vinegar; OR 3 Tbsp cider vinegar and 2 Tbsp sugar or sugar substitute (we recommend Stevia) 1 clove crushed garlic 1 thinly sliced onion 1 thinly sliced red pepper 1/3 C chopped cilantro Dash crushed dried chili pepper Salt and pepper to taste 1/4 C chopped roasted almonds (optional)
Thinly slice cucumber; add Skinny Noodles and vinegar mixture. Mix and let marinate while preparing remaining ingredients. Add remaining ingredients and mix well. Add salt and pepper to taste.
