Chilled Ramen (Hiyashi Chuka)
Makes 1 serving
Ingredients1 7 oz package Skinny Noodles Ramen Style
1 Tbsp soy sauce
1-1/2 tsp mirin
1 tsp sesame oil
1 Tbsp seasoned rice vinegar
1/2 cup cold water
Optional Ingredients
Thinly sliced cucumber
Tomatoes
Ham
Cooked chicken or tofu
Japanese style egg omelet
Picked ginger (shoga)
Thinly cut nori strips (dried seaweed)
Hot Japanese yellow mustard
Empty noodles into a colander, rinse with hot water, drain well. Blot with paper towel, refrigerate for 30 minutes to 1 hour. In a small bowl, mix soy sauce, mirin, sesame oil, cold water, and seasoned rice vinegar; set aside. Transfer chilled noodles to a shallow bowl, add optional toppings. Drizzle with soy/vinegar mixture. Serve cold.
