Lentil and Skinny Noodles Soup
This tasty soup is easy to make and protein-filled. You’ll love this delicious soup especially on a cold day.
Makes 2 servings
Ingredients
1 8 oz package Skinny Noodles Macaroni (or any Skinny Noodles variety), drained and rinsed
2 Tbsp olive oil
2 cloves garlic, minced
1 Tbsp chopped onion
1/4 to ½ lbs skinless chicken breast, cut into small bite-sized pieces
1 to 1-1/2 cups chicken broth
1/2 cup cooked lentils
1 cup frozen mixed vegetable (or your favorite fresh vegetables)
Salt and pepper to taste
Parmesan cheese (if desired)
Rinse and drain Skinny Noodles Macaroni and set aside. Add olive oil to skillet, sauté garlic and onion on low heat until the garlic turns light brown. Add chicken and cook until lightly browned. Add chicken broth, lentils and vegetables. Bring to a boil, then reduce heat. Add Skinny Noodles Macaroni and simmer 3 minutes. Remove from heat, top with Parmesan if desired, serve hot.
