Chicken Carbonara

Popular chicken carbonara made lighter with Skinny Noodles Shirataki!

Skinny Chicken CarbonaraMakes 2 servings

1 8 oz package Skinny Noodles Spaghetti or Angel Hair, drained, rinsed, cut into 5 to 8-inch length
1/2 lb boneless, skinless chicken breast, cut into small bite-sized pieces
1 egg yolk
2 oz bacon, cut into small pieces
1/4 C heavy cream
1/4 C grated Parmesan cheese
1 Tbsp parsley, chopped
2 Tbsp olive oil
Salt and black pepper

Place prepared Skinny Noodles into a non-stick skillet and fry over medium heat for about 1 minute or until excess water has evaporated. Set aside. In a bowl, mix egg yolk and heavy cream until well blended. Add Parmesan cheese and mix well. Cook bacon until crispy. Place the cooked bacon on a paper towel to soak up the excess oil. Add olive oil into the skillet and cook chicken over medium heat. Cook well. Return Skinny Noodles and bacon into the skillet. Add the egg, cream, and Parmesan mixture. Cook for less than 1 minute. Add salt and black pepper. Sprinkle parsley over the noodles. Enjoy!
