Easy Summer Salad

The perfect salad for a hot summer day! Takes less than 5 minutes to prepare. Light and refreshing, it's sure to be a family favorite!

Skinny Easy Summer Salad with Shirataki NoodlesMakes 4 servings

2 8 oz packages Skinny Noodles Spaghetti or Angel Hair, drained and rinsed
8 oz shredded cabbage 
1 C sliced red and/or yellow peppers
4 Tbsp olive oil
2 Tbsp wine vinegar
Salt and pepper to season

Salad dressing: In a small bowl, mix the oil and vinegar. Season with salt and pepper and mix well. Pour dressing over well-drained Skinny Noodles and coat thoroughly. Add cabbage and peppers to the noodles. Mix well and serve chilled.
