Skinny Rice PuddingMakes 2 servings
1/2 8 oz package (or 4 oz) Skinny Rice Shirataki, drained and rinsed well
6 oz plain, non-fat Greek yogurt
1/2 C frozen blueberries
Sweeten to taste with honey or sugar substitute (we recommend Stevia)
Mix all ingredients together until blended, being careful not to crush blueberries. Serve chilled.
Alternate Serving Suggestion: Instead of honey or sugar substitute, you may also sweeten to taste with light blueberry jam if desired. One teaspoon of light blueberry jam contains about 7 calories, 1g carbohydrates.
