Yaki-Soba

Yaki-Soba with Skinny Noodles Ramen Style
Makes 1 serving

Ingredients

1 7 oz package Skinny Noodles Ramen Style
Olive Oil
Water
1 Tbsp soy sauce
1-1/2 tsp mirin
1 tsp sesame oil

Optional Ingredients

Green onions
Sliced cabbage
Mushrooms
Corn
Bean sprouts
Tofu or diced cooked meat

Empty noodles into a colander, rinse with hot water, and drain well. Blot with paper towel to remove more moisture. Pan fry noodles in a non-stick pan on medium-high heat to remove moisture (1-2 minutes). Remove from pan and set aside. Reduce heat, drizzle pan with olive oil; lightly sauté veggies (green onions, sliced cabbage, mushrooms, corn, bean sprouts, etc.), tofu, or diced cooked meat. Add noodles back into pan with veggies. Season with soy sauce, mirin, and sesame oil mixture; stir fry 2-3 minutes. Adjust taste if desired and serve hot.
